RARE HONEY FROM THE PYRENEES MOUNTAINS
Harvested in July at more than 1500m altitude in the heart of the Pyrenees, this rare honey has very delicate floral notes with a slight rose flavor.
OUT OF PHASE HONEY
This honey is raw, it has not undergone any heating and naturally goes through 4 phases:
1 - It is liquid at the time of harvest
2 - It often becomes thicker during winter
3 - Then either it remains frozen or it shifts. The honey is separated into a liquid part and a thicker part. Unphased honeys always taste very good.
4 - When stored at room temperature for an extended period of time, honey can ferment naturally. It remains edible and is perfect for cooking and baking.

The harvest
Harvested in France. In the Ariège Pyrenees where beekeeper Jean-Mary places his hives at an altitude of 1500 m to harvest this precious nectar.
Other foraged flowers: bramble, white clover
